Beets

Beets are a cool season crop that thrive in spring and fall. This half hardy crop can tolerate light freezes. Grow beets from seed in succession every three weeks for continual harvest. Enjoy a bountiful supply of earthy sweetness for much of the year if properly stored by preserving or utilizing a root cellar. Beets are delicious roasted, pickled, steamed or baked. The top greens are also edible and quite flavorful.
